Heart Healthy Sweet Potato Lentil Soup

In this soup, bright orange chunks of sweet potato cook along with healthy aromatics, warm spices and lentils, until tender and creamy. A handful of baby spinach stirs in at the end for a pop of nutritious green. And the finishing touch? Add a gorgeous drizzle of heart healthy extra virgin olive oil. One of the best parts of this soup is that it cooks all in one pot in about 30 minutes.

Ingredients

2T Extra Virgin Olive Oil
1 Small Onion, pre-chopped
1 T Garlic, pre-minced
2 Sweet Potatoes, cubed
1 t Ginger
1 t Sea Salt
1/4 t Black Pepper
15 oz Can of lentils, drained
2 cups Chicken or Vegetable Broth, unsalted
4 oz baby spinach

Instructions

  • Heat 1T oil in a large pot over medium heat. Add onion and garlic. Cook, stirring, for 5 minutes.
  • Add cubed sweet potatoes to pot and cook for 5 minutes.
  • Add ginger, salt, pepper, lentils, and broth.Β 
  • Cook for 10 minutes or until sweet potatoes are soft.
  • Add spinach and stir in 1 T oil.

Notes

Top with poached eggs if you want to make this soup even heartier.
