Ingredients

4 c filtered water
2-inch piece of ginger root, unpeeled, sliced (use a 4-inch piece for a spicy tea)
1 lemon, juiced
6 sprigs of mint, or two drops of peppermint essential oil
Instructions
- Bring water to a boil in a 4-quart saucepan.
- While the water boils, slice the ginger and juice the lemon.
- Once boiling, remove from heat. Add ginger root and mint leaves to the hot water.
- Cover the pot and steep tea for 10 minutes or longer for a stronger, more robust tea.
- Strain.
- Add the lemon juice.
- Serve hot or store in the refrigerator and serve cold.
- If desired, add a natural sweetener such as brown rice syrup.
